Sweet Corn Salad

Effort: Super-easy

You will need:

✅ 1 cup sweet corn (canned, cooked, drained)

✅ 1 small onion (chopped)

✅ 1/2 of a bell pepper (chopped)

✅ 1/2 lemon

✅ 1 tablespoon coriander leaves (chopped)

Note: Salt is omitted as the canned sweet corns are already high in salt. It is always good practice to choose low-salt canned products. However, I could not find a low-salt one from my home town (where I lived when I made this recipe).

Method:

  1. Mix all ingredients in a large bowl. Refrigerate until ready to serve.

Leftovers

Refrigerate in an airtight container for up to five days.

More Flavor

Add paprika, minced garlic and/or sea salt.

Additional Toppings

Top with green onions, grilled tofu, roasted chickpeas, or mangoes (cubed)

Serve it With

Tacos, brown rice tortilla chips or baked plantain chips.
