Stir Fry Snake Gourd

You will need:

✅ 1 tablespoon olive oil

✅ 1 medium onion (chopped)

✅ 3 average garlic (chopped)

✅ 2 small or 1 big snake gourd (chopped)

✅ 1/2 teaspoon turmeric powder

✅ 1/2 teaspoon salt

✅ 1 can (213g) tuna fish OR 1 stick dried vacuum tuna fish (Valhomas)

✅ Optional: 2 stem curry leaves

✅ Optional: Scotch bonnet (as required)

Method:

  • Add 1 tablespoon olive oil, chopped onion, and curry leaves in a pan and cook over medium heat for 2 minutes.

  • Add chopped garlic and cook for 1 minute.

  • Add chopped snake gourd to the pan, cover with the lid and cook over low heat for 3 minutes.

  • Add 1/2 teaspoon salt and 1/2 teaspoon turmeric and cook for 2 minutes.

  • Add dried tuna fish (Valhomas) and cook for 1 minute.

  • Serve with a leaf salad.
