Scrambled Eggs with Mushroom

You will need:
✅ 4 eggs (2 egg yolks removed)
✅ 1 small onion (chopped)
✅ 4 tablespoons sliced mushroom
✅ 1 medium tomato (chopped)
✅ 2 small garlic (chopped)
✅ 1 tablespoon olive oil
✅ 1/8 teaspoon turmeric
✅ 1/8 teaspoon salt (optional)
✅ 1/8 teaspoon black pepper powder (optional)
✅ 1/4 teaspoon garam masala (optional)
Method:
Remove egg yolks from half of the eggs and whisk the eggs in a bowl. Add turmeric, salt, black pepper powder, and garam masala (optional) into the egg bowl, mix well and set aside.
Heat olive oil in a pan over medium heat. Add chopped onions and sliced mushrooms to the pan and cook for about three minutes, stirring often, until just starting to brown.
Add chopped tomato and garlic. Stir to combine and cook for one minute.
Pour the eggs and scramble lightly. Stir and cook until fluffy for about two minutes.
Serve with any of your favourite whole grains and drink! (Here, I have used two medium slices of brown bread and 150 ml of orange juice).
