Scrambled Eggs with Mushroom

You will need:

✅ 4 eggs (2 egg yolks removed)

✅ 1 small onion (chopped)

✅ 4 tablespoons sliced mushroom

✅ 1 medium tomato (chopped)

✅ 2 small garlic (chopped)

✅ 1 tablespoon olive oil

✅ 1/8 teaspoon turmeric

✅ 1/8 teaspoon salt (optional)

✅ 1/8 teaspoon black pepper powder (optional)

✅ 1/4 teaspoon garam masala (optional)

Method:

  • Remove egg yolks from half of the eggs and whisk the eggs in a bowl. Add turmeric, salt, black pepper powder, and garam masala (optional) into the egg bowl, mix well and set aside.

  • Heat olive oil in a pan over medium heat. Add chopped onions and sliced mushrooms to the pan and cook for about three minutes, stirring often, until just starting to brown.

  • Add chopped tomato and garlic. Stir to combine and cook for one minute.

  • Pour the eggs and scramble lightly. Stir and cook until fluffy for about two minutes.

  • Serve with any of your favourite whole grains and drink! (Here, I have used two medium slices of brown bread and 150 ml of orange juice).
