Roasted Chickpeas

You will need:

✅ 1 cup Chickpeas (canned, cooked and drained)

✅ 1/2 tsp Extra Virgin Olive Oil

✅ 1/2 tsp Black Pepper

✅ 1/2 tsp rosemary (or any of your favourite seasonings)

Note: Salt is omitted as the canned chickpeas are already high in salt. It is always good practice to choose low-salt canned products. However, I could not find a low-salt one from my home town (where I lived while I made this recipe).

Method:

  1. Place chickpeas in a mixing bowl and add olive oil, rosemary (any of your favourite seasonings), and black pepper (optional). Mix until chickpeas are evenly coated.

  2. Place a baking sheet with parchment paper and set the oven to 200ºC.

  3. Spread the chickpeas across the baking sheet. Bake for 20 minutes.

Leftovers

They keep well in an airtight container in the fridge for up to 5 days. They will lose their crunchiness with time, so throw them back into the oven before eating if you want to crisp them back up.

Make Them Crispy

Bake for longer if you like them really crispy.

Serving Size

One serving is approximately 1/2 cup.
