Mixed vegetable brown rice

You will need:

For the mixed vegetables

✅ 1 teaspoon olive oil

✅ 1 medium onion (chopped)

✅ 1 stem curry leaves (optional)

✅ 3 average garlic (chopped)

✅ 1-inch ginger (chopped)

✅ 3 tablespoon tomato sauce

✅ 1 cup frozen mixed vegetables

✅ 1 canned fish (180g) - drained

For the rice

✅ 1 cup (rice cup) brown rice

✅ 2 cups water

✅ 1/4 teaspoon salt

✅ 1/2 teaspoon olive oil

Method:

  • Cook the rice with oil, salt, and water.

  • Heat olive oil in a pan over medium heat. Add chopped onions and curry leaves to the pan. Cook for about three minutes, stirring often, until just starting to brown.

  • Add chopped garlic and ginger, stir and cook for about 1-2 minutes. Then add tomato sauce. Stir to combine and cook for one minute.

  • Pour the canned fish and mixed vegetables and mix well. Cook for another 3 minutes. Then add cooked rice and mix well.

  • Serve with a leaf salad.
