Mixed vegetable brown rice

You will need:
For the mixed vegetables
✅ 1 teaspoon olive oil
✅ 1 medium onion (chopped)
✅ 1 stem curry leaves (optional)
✅ 3 average garlic (chopped)
✅ 1-inch ginger (chopped)
✅ 3 tablespoon tomato sauce
✅ 1 cup frozen mixed vegetables
✅ 1 canned fish (180g) - drained
For the rice
✅ 1 cup (rice cup) brown rice
✅ 2 cups water
✅ 1/4 teaspoon salt
✅ 1/2 teaspoon olive oil
Method:
Cook the rice with oil, salt, and water.
Heat olive oil in a pan over medium heat. Add chopped onions and curry leaves to the pan. Cook for about three minutes, stirring often, until just starting to brown.
Add chopped garlic and ginger, stir and cook for about 1-2 minutes. Then add tomato sauce. Stir to combine and cook for one minute.
Pour the canned fish and mixed vegetables and mix well. Cook for another 3 minutes. Then add cooked rice and mix well.
Serve with a leaf salad.
