Egg Bhurji

You will need:

✅ 4 eggs

✅ 2 small garlic (chopped)

✅ 1 small onion (chopped)

✅ 1 medium tomato (chopped)

✅ 1/2 small green chilli pepper (chopped)

✅ 1/2 teaspoon garam masala

✅ 1/4 teaspoon turmeric

✅ 1/4 teaspoon coriander

✅ 1/4 teaspoon salt

✅ 1 teaspoon olive oil

✅ 1 tablespoon coriander leaves (chopped)

Method:

  • Remove egg yolks from half of the eggs. Add garam masala, turmeric, coriander and salt. Whisk the eggs in a bowl and set aside.

  • Heat olive oil in a pan over medium heat. Add chopped onions and cook for about three minutes, stirring often, until just starting to brown.

  • Add tomato, green chilli pepper, and garlic. Stir and cook for one minute.

  • Pour the eggs and scramble lightly. Cook until fluffy for about two minutes.

  • Remove from the heat and garnish with coriander leaves.

  • Serve with any of your favourite whole grains and drink! Here, I have used two medium slices of brown bread and 150 ml of orange juice.
