Egg Bhurji

You will need:
✅ 4 eggs
✅ 2 small garlic (chopped)
✅ 1 small onion (chopped)
✅ 1 medium tomato (chopped)
✅ 1/2 small green chilli pepper (chopped)
✅ 1/2 teaspoon garam masala
✅ 1/4 teaspoon turmeric
✅ 1/4 teaspoon coriander
✅ 1/4 teaspoon salt
✅ 1 teaspoon olive oil
✅ 1 tablespoon coriander leaves (chopped)
Method:
Remove egg yolks from half of the eggs. Add garam masala, turmeric, coriander and salt. Whisk the eggs in a bowl and set aside.
Heat olive oil in a pan over medium heat. Add chopped onions and cook for about three minutes, stirring often, until just starting to brown.
Add tomato, green chilli pepper, and garlic. Stir and cook for one minute.
Pour the eggs and scramble lightly. Cook until fluffy for about two minutes.
Remove from the heat and garnish with coriander leaves.
Serve with any of your favourite whole grains and drink! Here, I have used two medium slices of brown bread and 150 ml of orange juice.
